You can "play" with the amounts of carrots and sweet potatoes, according to what's in your kitchen, but it is important that the final result will be quite thick. So you need to keep the water level at the height of vegetables.
INGREDIENTS AND PREPARATIONS :
Advance preparations are recommended :
- Even the next day the soup will be as delicious as fresh
Cook until soften :
- 8 medium carrots, coarsely sliced
- 2 large sweet potatoes, peeled and diced bite size
- 4 cups of water or untill the vegetables are covered
- Chicken soup powder (it is important to keep the sweetness of the vegetables)
Grind to smooth puree with a stick mixer
Serving :
- Stir in 1/3 cups of cooking cream 10% fat
- Serve with garlic croutons or garlic challah
